Gluten Free Cherry Macadamia Nut Cookies, The Benefits of Kindness and Connection, Sunshine and a Safer Swap Tip For The Dryer

Hi Friends!

How are you doing so far in the new year? I was personally thankful to get a good solid three days of full sunshine here in Northern Michigan in January! I have a picture below of me at the lake where the ice was just beginning to freeze over it. I have found since moving back to my childhood state of Northern Michigan from Maryland, after living on the East Coast for 32 plus years, I did not know or even realize that there is less sunshine in the winter here by 25%. The plus side of that is we have more sunshine and daylight hours here in the Summer, and the weather is gorgeous, plus the air is so fresh all the time. I wanted to share a new grain and gluten free cookie recipe with you today that is tasty and has no refined sugar (sweetened with Maple Syrup).

Gluten Free Cherry Macadamia Nut Cookies (Grain Free and Dairy Free Also)

These cookies come together easily with a hand mixer.

Ingredients:

1 Cup of Macadamia Nuts (ground in the food processor to a nut flour)

1/2 Cup of Cashew Butter

1/4 Cup of Coconut Oil

1/4 Cup of Dried Cherries

1/4 Cup of Pecans (coarsely chopped)

1 Egg

2 Tablespoons of Maple Syrup

1 Teaspoon of Vanilla Extract

1/2 Teaspoon of Baking Soda

1/4 Teaspoon of Salt

Directions:

Preheat your oven to 350 degrees F.

In a food processor, grind the macadamia nuts until they are fine like almond flour. Add the remaining ingredients except the dried cherries and pecans. Blend until completely combined, scraping the sides of the bowl half way through. Remove the blade from the food processor and stir in the cherries and pecans.

Scoop onto parchment lined cookies sheets with a tablespoon cookie scoop. Press down until they are an even height with your fingertips, and then bake in the preheated oven for 14 minutes.

Let cool, and enjoy.

Gluten Free Cherry Macadamia Nut Cookies Recipe

Here’s the photo of me at the lake in the sunshine. It’s very cool to skip stones across the thinly frozen ice. It makes a type of musical sound. The benefits of sunshine are numerous including better sleep, increasing vitamin D levels for immunity, brain and bone health. Exposure to sunshine also helps with Seasonal Affective Disorder and low mood.

On another note, the world today seems a little more serious and impatient than is was five years ago, and I want to encourage you to make sure to find time to enjoy your life, have some fun, and find things that make you laugh.

Kindness circles back to you. The more you send it out into the world, by the words you speak, the better the world will become.
Here’s an example. Have you ever made someone’s day just by speaking kind words to a check out clerk at the store? They noticeably perk up, and then as you leave, you hear them greet the next person in line with a happier more animated tone? I have. That’s what kind words do. They start this whole effect of paying it forward. Kindness increases people’s faith in humans in general and creates a ripple effect. It’s like a tiny seed you plant every time you speak. It grows, creates new plants and then more seeds you may never see, but they are happening and making the world a better place.


The added benefit of these small connections is you feel happier, healthier and more positive as you feel a little more connected to other humans. Those casual connections are important. The next time you are in line at a store and get to the cashier, ask them how their day is going.

Swap out Dryer Sheet for Wool Dryer Balls

Now I have a healthy living tip to share. Swap out dryer sheets and fabric softener for wool dryer balls.

Wool dryer balls can be used over and over and over and don’t release toxic chemicals onto your clothing that you then put on your skin! They are eco friendly and great for fluffing up your clothes and preventing wrinkles too.

Dryer sheets are from synthetic polyester, with toxic chemicals which release to target the electrostatic charges. Dryer sheet manufacturers typically list only some of the ingredients on the dryer sheet box, but others don’t list any ingredients at all. Dryer sheets are a sneaky single-use plastic, designed to be used once then tossed out, where they will persist in the environment forever. Instead try 100% Wool Dryer Balls, which not only reduce static – but reduce drying time, too! If you want an added scent, add a few drops of your favorite Essential Oil. Here’s the wool dryer balls I use.

Choosing Joy in Daily Life

Happy start of a new week! Yes, there are many reasons to not feel joy, but did you know you can choose it in the little things? Here’s some tips to have more joy in your week.

  1. Start your day with positive thoughts or choose an inspirational quote or verse to keep you on track and pin it somewhere you will see it throughout the week.
  2. Make yourself something delicious that will also benefit your body and your health.
  3. Reach out to a friend or family member just because and chat.
  4. Buy yourself some real flowers in your favorite color when you are at the grocery store. They have such pretty ones.
  5. Take a bath or give yourself a facial this week. Rub on a beautiful lotion or hand creme.
  6. Take a walk or do a stretching routine. It makes you feel good inside your own body and boosts feel good endorphins.
  7. Smile. Your brain will tell you your are happy.

Plant Based “Milk” Chocolate Macadamia Nut Milk

Do you like your nut milks creamy?

This is a dairy free “milk” chocolate beverage made with macadamia nuts, which are one of my favorites to make nut milk with, because they make a very creamy drink, and you don’t have to strain it. The macadamia nuts are soft and higher in fat, so you get to skip that step.

Plant Based Milk Chocolate Macadamia Milk

This recipe makes a little over two cups, which is the perfect size to use up in a couple days, and it takes just ten minutes hands on to make. Love that about it!

So let’s get you some creamy, chocolate nut milk!

Plant Based “Milk” Chocolate Macadamia Nut Milk

Ingredients:

1/2 Cup of Raw Macadamia Nuts (I like this g/f brand)

2 Tablespoons of Raw Cacao Powder

1 Teaspoon of Real Vanilla Extract

1/4 Teaspoon of Pure Monk Fruit

1/8 Teaspoon of Sea Salt

2 Cups of Filtered Water

Directions: Measure 1/2 Cup of macadamia nuts into a 4 cup measure and cover with water to soak for two hours. Walk away, no work to be done here but wait! 🙂

After the macadamia nuts have soaked, strain them through a colander and rinse with cold water. Then, add the macadamia nuts to a high speed blender with the remaining ingredients. Blend on high speed for three minutes.

Pour straight into a quart jar add the lid and refrigerate.

Easy peasy milk chocolate that is sweet and delicious!

Perfectionism is a joy sapper.  A lot of times we are perfectionists because we are trying to live up to unrealistic expectations of someone else or ourselves, because we think we can’t be loved if we aren’t perfect, or don’t feel approved of, or good enough…….Perfect body, perfect hair, perfect student, perfect, career, perfect house, perfect cook, perfect wife, perfect mother, perfect child, perfect in your job, perfect speaker, perfect shoe shiner, fill in the blank. It is good to do things well, but if nothing is ever perfect enough to you, it is time to say it is good enough, and just be happy where you are at this moment. We are all perfectly created individuals with our own uniqueness to offer the world, and what society, your past, or anyone else tells you is perfect, and will make you happy, may not be true for you. Be kind to yourself, relax, enjoy the ride of life. Oh, and yes, take care of your inner self! You need a little bit of peace and me time every day, or it slowly whittles away at your core.

Winter Health Tips to Fight the Blues!

Welcome February! What are you looking forward to this month? This is the time of year people can become starved for color and suffer from SAD. Try adding a splash of color to your wardrobe each day to boost feel good vibes. A positive thought before your feet even hit the floor in the morning can make a big difference in how your day goes, and it is cumulative! So, the more you put this into practice, the bigger the benefits, because you are literally rewiring your brain.

Deep breathing for a few minutes when you are feeling stressed, by breathing in four, holding for four and exhaling for 8 lowers stress. Try doing ten rounds of this with your eyes closed. It only takes a couple minutes, and finally getting outdoors into the fresh air, especially on sunny days, even for 15 minutes, promotes sleep, raises vitamin D levels, and boosts well being. Feeling happy and relaxed makes you radiate beauty!

Move Forward and Keep Striving for Excellence!

If you are human, you have made mistakes. You simply cannot be living and get everything perfect all the time.

When you start out as a baby, one of the ways you learn how to crawl, walk and run is by trial and error. There will inevitably be bumps and bruises, some more than others. The learning and mistakes go on throughout life.

Move Forward and Keep Striving for Excellence

As we get older and have more freedom and choices, the mistakes get bigger than stumbling and bumping your head as a toddler.

I have found mistakes have helped me grow, and some of my most meaningful moments and times have been when I was afraid to do something, and I did it anyway. Sometimes stepping out has brought much heartache and a longer recovery period for my heart than I could have ever foreseen. But it has always, always made me more than I was yesterday.

I want you all to know dear ones, that you are more than your mistakes. You should never feel defeated by them for long. You are more than you were yesterday, and you will be even more than that tomorrow. Let yourself be open to love, abundance, forgiveness and hope for the future. Keep going.

Dreams and Purpose

What are your dreams? I hope you have some, because at every age we need dreams and purpose no matter how young or old you are! Dreams give us things to strive for, hope, excitement about our lives, and goals. I have found when I talk to people that tell me they don’t have dreams, they are in a state of depression, illness or some other difficult circumstance. Finding a purpose and going to sleep with a dream can help.

Dreams and purpose also tie in with thankfulness. Can we be thankful in all circumstances? I admit it is much easier to be thankful when everything is going right, but it is possible to be thankful, have purpose and dreams when things are not. One tip is to get into the practice of writing down ten things you are thankful for every morning. You can have a pad next to your bed, a notebook, or jot it down while you are having breakfast on your phone’s notes. If you can’t think of anything, because your circumstances are too hard, start simple.
