Gluten Free Cherry Macadamia Nut Cookies, The Benefits of Kindness and Connection, Sunshine and a Safer Swap Tip For The Dryer

Hi Friends!

How are you doing so far in the new year? I was personally thankful to get a good solid three days of full sunshine here in Northern Michigan in January! I have a picture below of me at the lake where the ice was just beginning to freeze over it. I have found since moving back to my childhood state of Northern Michigan from Maryland, after living on the East Coast for 32 plus years, I did not know or even realize that there is less sunshine in the winter here by 25%. The plus side of that is we have more sunshine and daylight hours here in the Summer, and the weather is gorgeous, plus the air is so fresh all the time. I wanted to share a new grain and gluten free cookie recipe with you today that is tasty and has no refined sugar (sweetened with Maple Syrup).

Gluten Free Cherry Macadamia Nut Cookies (Grain Free and Dairy Free Also)

These cookies come together easily with a hand mixer.

Ingredients:

1 Cup of Macadamia Nuts (ground in the food processor to a nut flour)

1/2 Cup of Cashew Butter

1/4 Cup of Coconut Oil

1/4 Cup of Dried Cherries

1/4 Cup of Pecans (coarsely chopped)

1 Egg

2 Tablespoons of Maple Syrup

1 Teaspoon of Vanilla Extract

1/2 Teaspoon of Baking Soda

1/4 Teaspoon of Salt

Directions:

Preheat your oven to 350 degrees F.

In a food processor, grind the macadamia nuts until they are fine like almond flour. Add the remaining ingredients except the dried cherries and pecans. Blend until completely combined, scraping the sides of the bowl half way through. Remove the blade from the food processor and stir in the cherries and pecans.

Scoop onto parchment lined cookies sheets with a tablespoon cookie scoop. Press down until they are an even height with your fingertips, and then bake in the preheated oven for 14 minutes.

Let cool, and enjoy.

Gluten Free Cherry Macadamia Nut Cookies Recipe

Here’s the photo of me at the lake in the sunshine. It’s very cool to skip stones across the thinly frozen ice. It makes a type of musical sound. The benefits of sunshine are numerous including better sleep, increasing vitamin D levels for immunity, brain and bone health. Exposure to sunshine also helps with Seasonal Affective Disorder and low mood.

On another note, the world today seems a little more serious and impatient than is was five years ago, and I want to encourage you to make sure to find time to enjoy your life, have some fun, and find things that make you laugh.

Kindness circles back to you. The more you send it out into the world, by the words you speak, the better the world will become.
Here’s an example. Have you ever made someone’s day just by speaking kind words to a check out clerk at the store? They noticeably perk up, and then as you leave, you hear them greet the next person in line with a happier more animated tone? I have. That’s what kind words do. They start this whole effect of paying it forward. Kindness increases people’s faith in humans in general and creates a ripple effect. It’s like a tiny seed you plant every time you speak. It grows, creates new plants and then more seeds you may never see, but they are happening and making the world a better place.


The added benefit of these small connections is you feel happier, healthier and more positive as you feel a little more connected to other humans. Those casual connections are important. The next time you are in line at a store and get to the cashier, ask them how their day is going.

Swap out Dryer Sheet for Wool Dryer Balls

Now I have a healthy living tip to share. Swap out dryer sheets and fabric softener for wool dryer balls.

Wool dryer balls can be used over and over and over and don’t release toxic chemicals onto your clothing that you then put on your skin! They are eco friendly and great for fluffing up your clothes and preventing wrinkles too.

Dryer sheets are from synthetic polyester, with toxic chemicals which release to target the electrostatic charges. Dryer sheet manufacturers typically list only some of the ingredients on the dryer sheet box, but others don’t list any ingredients at all. Dryer sheets are a sneaky single-use plastic, designed to be used once then tossed out, where they will persist in the environment forever. Instead try 100% Wool Dryer Balls, which not only reduce static – but reduce drying time, too! If you want an added scent, add a few drops of your favorite Essential Oil. Gluten Free Black and White Cookies!

Gluten Free Black and White Cookies

The first day of Fall makes me want to bake. I think it is a case of the cozies along with all the things that go with Autumn like cozy sweaters, crisp leaves, hot drinks with warm comforting spices like chai and pumpkin spice. So naturally my mind goes to cookies to go with these other enticing things. What better cookie than the black and white that is a little elegant, and you get two sides of frosting, so you don’t have to choose.

This cookie has a soft yet slightly firm and lovely buttery taste and texture. It goes perfectly with a cup of something warm and cozy and a good book or a fun gathering and will satisfy your cookie yearning and certainly fulfilled a baking obsession for the day. Other bakers will understand. If you don’t, it’s okay, you can still bake and enjoy these cookies. They do not require rolling to get the round shape, which is a plus for me, because….why am I so busy? Life is busy, isn’t it? Let’s get on to this cookie recipe. The maple sugar is a nod to fall and does add rich flavor, but you can and should substitute cane sugar if you do not have maple sugar on hand. It will work the same and be lovely!

Gluten Free Black and White Cookies

Preheat your oven to 350 degrees F.

Lay out two cookie sheets. I covered mine in parchment.

Ingredients for the Cookie:

1 1/2 Cup of All Purpose Gluten Free Flour Blend that contains Xanthum Gum (I used King Arthur Measure for Measure in this recipe)

1/2 Cup of Butter

1/3 Cup of Maple Sugar or Cane Sugar

1/4 Cup of Plain Greek Yogurt

1 Egg

1 Teaspoon of Vanilla Extract

1/2 Teaspoon of Baking Soda

1/2 Teaspoon of Salt

Directions: Cream together the softened butter and sugar for one minute. Add the egg and continue to bear until it is incorporated. Then add the yogurt and vanilla extract. Sift together the other dry ingredients (flour, baking soda and salt). Add the dry ingredients to the butter mixture and beat slowly until incorporated and then turn to medium to fully incorporate the flour.

With a tablespoon cookie scoop, scoop out balls of dough onto two cookie sheets flat side down. Space them two inches apart and with damp fingers press the balls flat. This is about three finger widths or 1/2 inch thick. Bake the cookies in the preheated oven for 14 minutes. The edges will be slightly golden brown. Remove from the oven and cool completely.

Now the frosting! I used Enjoy Life Dark Chocolate Chips for my chocolate side.

In a double broiler, melt 1/2 cup of chocolate chips (use what you like) Set aside and make the vanilla frosting.

Vanilla Frosting:

1/2 Cup of Powdered Sugar

1 Teaspoon of Honey

1/2 Teaspoon of Vanilla

2 Teaspoons of water ( add a teaspoon at a time after the rest of the ingredients until it is spreading consistency.

Frost the vanilla side of each cookie with a butter knife. Then frost the opposite half of the cookie with chocolate. Set the cookies aside so the frosting dries and hardens. This takes a couple hours. Enjoy!

Gluten Free Chocolate Chip Shortbread Cookies

Shortbread cookies that melt in your mouth are one of my favorites! My other favorite is, like many people, chocolate chip! This cookie recipe combines the best of both to bring you a Chocolate Chip Shortbread Cookie!

This cookie uses just superfine rice flour for the delicate texture and flavor that you want in a shortbread cookie without using the traditional wheat flour. AND it is more heart healthy but with all the flavor because I used half ghee and half olive oil for the fat. It works beautifully in this cookie! This recipe also uses pure organic cane sugar, and there is only a half a teaspoon in each cookie. This batch makes two dozen delicious shortbread cookies that are perfectly sweetened with sugar and the sweetness of the rice flour.

Let’s bake these beauties!

Gluten Free Chocolate Chip Shortbread Cookies

Preheat your oven to 350 degrees F. Lay out two parchment lined cookie sheets.

Ingredients:

1/4 Cup of Ghee

1/4 Cup of Olive Oil

2 Eggs

1 Teaspoon of Vanilla

1/4 Cup of Cane Sugar

1 1/4 Cups of Superfine Rice Flour (I use Authentic Foods brand, regular rice flour is coarser and will give a different result)

1 1/2 Teaspoons of Baking Soda

1/4 Teaspoon of Salt

1 Teaspoon of Apple Cider Vinegar

1/2 Cup of Chocolate Chips (I used Enjoy Life)

Directions:

In a stand mixer, or you can use a bowl with electric beaters, mix your ghee, olive oil and sugar until creamy and light in color like an egg yolk. This will take one to three minutes, longer if you are using a hand mixer. Add the eggs one at a time beating until incorporated. Add the vanilla extract and blend. In a small bowl, whisk together the dry ingredients, the rice flour, baking soda and salt. Add the dry ingredients to your wet and mix until incorporated completely. Add the teaspoon of apple cider vinegar and mix. Finally, stir in the chocolate chips.

Scoop the cookie dough by the tablespoon onto two cookie sheets evenly spaced. I like to use a cookie scoop for this. Flatten by half with your fingertips. Bake in your preheated oven for 10 to 12 minutes. The cookies will be set, but they will not brown. They will be the pale color of shortbread.

Remove from the oven and cool for 5 minutes on the cookie sheet.

Enjoy! These also freeze beautifully!

Healthier Snickerdoodles – Gluten Free

Warm spices always sound so delicious and enticing when September hits. I like to fill my kitchen with the aroma, and Snickerdoodles are one of my favorite cookies. It’s nice to have an allergen friendly cookie recipe in my arsenal, and one that is healthier too but still tastes sweet and yummy.

This is a new recipe for Snickerdoodle cookies that are gluten, dairy and nut free. I have a few options for you as well with ingredients you have right in your cupboard.

You can make these with maple sugar for a cinnamon maple flavor. Very good! But you can also use pure cane sugar if you choose. They are delicious both ways. I love the whole grain single flour option in this recipe. I started out making them with quinoa flour, and then I tested them with brown rice flour. They both tasted like a great Snickerdoodle with a nice texture. The main difference is when you use quinoa flour, the cookies tastes nutty. I like them both ways and have been rotating how I make them.

With a little lower sugar, these cookies are better for you. I also used half shortening and half olive oil. I have seen more and more baking with olive oil lately, and it is a healthy option. Italy for instance has been using it for baking for many, many years with delicious results.

Here’s how to make my healthier Snickerdoodles!

Gluten Free Snickerdoodles

Preheat your oven to 350 degrees F.

Ingredients:

2 Cups of Quinoa Flour or Brown Rice Flour

1/2 Cup of Maple Sugar or Pure Cane Sugar

1/2 Cup of Organic Shortening

1/2 Cup of Olive Oil

1 Egg

1 1/2 Teaspoons of Vanilla Extract

1/2 Teaspoon of Baking Soda

1/4 Teaspoon of Salt

Cinnamon for the tops (about a tablespoon)

Directions:

In a mixing bowl, beat the sugar, shortening and olive oil until creamy. Add the egg and vanilla extract, and beat again to incorporate well.

In another bowl, whisk together your flour, baking soda and salt. Then, add the flour mixture to the wet ingredients and mix until completely incorporated.

With a tablespoon cookie scoop, scoop out 24 tablespoon sized cookies onto two parchment lined cookie sheets. Flatten the cookies with the palm of your hand to half inch thick rounds. Sift the cinnamon over the tops of the cookies directly onto the cookie sheet.

Bake in your preheated oven for 12 to 14 minutes until the cookies are starting to turn golden brown around the edges. Cool on the cookie sheet.

Makes 24 cookies

Matcha Green Tea Cookies

These gently sweetened matcha green tea cookies are a biscuit cookie delight!

They are melt in your mouth goodness with the delightful taste of matcha green tea and maple sugar and the chewy caramel flavor of chopped turkish apricots. A tiny bit of cardamom gives them an exotic twist that you will love. If you have never had cardamom in a cookie, you are in for a wonderful surprise. It’s so good in cookies! You will love these healthier cookies made with a gluten free flour blend that are not overly sweet and are dairy free! I used olive oil, the newest healthier baking trend that I have been making recipes with for a while.

My daughter tasted her first one of these cookies and said they were so buttery. They taste buttery, but in fact it is a generous amount of healthy olive oil that is the secret!

These cookies are easy to shape to into fun little rectangles by patting them out into a slab and cutting and separating them.

Let’s bake cookies!

Matcha Green Tea Cookies

Preheat your oven to 350 degrees F.

Ingredients:

1 1/2 Cup of Gluten Free Flour Blend. I used King Arthur Measure for Measure in this recipe. A different blend has not been tested and may give slightly different results.

1/2 Cup of Olive Oil

2 Large Eggs

1/4 Cup of Maple Sugar (I use this brand)

1/3 Cup of Dried Turkish Apricots (finely diced) I get a lot of my dried fruit and nuts from nuts.com. I used organic and they are certified gluten free)

1 Teaspoon of Matcha Green Tea (I drink matcha every morning for energy, clarity and a metabolism boost!)

1 Teaspoon of Baking Soda

1/4 Teaspoon of Salt

1/4 Teaspoon of Ground Cardamom

Directions:

In a large mixing bowl, whisk together the flour, baking soda, salt, matcha and cardamom.

It another medium bowl beat your eggs, maple sugar, and olive oil with an electric mixer until it’s a creamy yellow – for about one minute.

Make a well in your flour mixture, and pour the beaten egg mixture into the flour bowl. Beat with your electric mixer until well incorporated. Fold in your chopped apricots. They dough will be stiff.

On a parchment lined baking sheet, dump out your cookie dough. Place another piece of parchment on top and pat and roll the dough out into a rectangle that is approximately 10 by 8 inches. You want the dough to be on the thick side so you get a nice puffy cookie, so make sure it’s about 1 inch thick. Remove the parchment and straighten the edges into a uniform shape with your hands.

With a large, sharp knife, cut the cookies into three rows long ways, six even cuts on the short side for 18 cookies total. You may need to add a little extra gluten free flour to the edge of your knife as you cut to prevent sticking.

With an offset spatula, separate the cookies about 2 inches apart onto the baking sheet.

Bake in your preheated oven for 15 minutes. The cookies will be slightly brown but still nice and green. Cool completely on the baking sheet.

These are a fun healthy cookie for St. Patrick’s Day!

Gluten Free Cinnamon Honey Cookies

These cakey cookies have warming cinnamon and honey in them with a drizzle of dark chocolate on top! The cookies are just sweet enough and made healthier with less sugar in the form of honey. Half the fat used is olive oil.

These are made with gluten free brown rice flour only which gives the cookie a cakey texture.

This recipe will make a batch of 14 cookies. Let’s bake healthier cookies!

Gluten Free Cinnamon Honey Cookies

Preheat the oven to 350 degrees F.

Ingredients:

1/3 Cup of Honey

2 Tablespoons of Ghee

2 Tablespoons of Good Olive Oil

1 Egg

1 Cup of Brown Rice Flour

1 Teaspoon of Ground Cinnamon

1/2 Teaspoon of Vanilla Extract

1/4 Teaspoon of Salt

1/4 Teaspoon of Baking Soda

1/4 Cup of Dark Chocolate Chips for drizzling on top

Directions:

In a medium bowl with an electric hand mixer, mix together the honey, ghee and olive oil until creamy. Add the egg and vanilla extract. Mix again until incorporated.

Sift together the brown rice flour, cinnamon, salt and baking soda, then add it to the honey mixture. Blend with the mixer on medium speed until thoroughly blended, about one minute.

With a tablespoon cookie scoop, scoop the cookies onto two parchment lined cookie sheets spaced two inches apart. Flatten the cookies slightly with the tips of your fingers.

Bake for ten minutes in your preheated oven. Remove the cookies from the oven and cool on the cookie sheet for a half an hour. In a double boiler, melt 1/4 cup of dark chocolate. Alternately, you can use a microwave by microwaving on high, stirring every ten seconds until just melted. If you take it too far, the chocolate will seize and not drizzle.

When the chocolate is melted, using a fork, scoop up some of the chocolate and drizzle it evenly over all the cookies. Let set until the chocolate dries. Store the cookies covered up to 3 days at room temperature. They also freeze very well.

Valentine’s Day Iced Heart Cookies (AIP Paleo friendly)

We all want to feel a little extra special on Valentine’s Day! I happen to like cookies!

Iced Valentines Day Cookies

I also like icing on cookies, especially when they are big heart shaped ones that I can add a splash of natural pink icing to for Valentine’s Day!

AIP Valentines Day Cookies

This is a small batch of six cookies that are a little bigger than average. I made them with all natural ingredients free of many allergens, including no eggs, nuts, dairy, gluten or grains. They are AIP Paleo friendly!Trio of Iced Valentines Day Cookies

They have a crunchy texture and a toasted nut like flavor without nuts!

Valentine’s Day Iced Heart Cookies

Preheat your oven to 350° F.

Ingredients:

1/2 Cup of Coconut Flour

1/4 Cup of Avocado Oil

1/4 Cup of Shredded Unsweetened Coconut

3 Tablespoons of Coconut Butter

3 Tablespoons of Honey

2 Tablespoons of Coconut Sugar

1 Tablespoon of Grass Fed Gelatin

1 Tablespoon of Arrowroot

1/4 Teaspoon of Sea Salt

1/4 Teaspoon of Baking Soda

1/4 Teaspoon of Cream of Tartar

1/8 Teaspoon of Vanilla Powder

Directions:

In a medium mixing bowl with a hand held mixer, beat your gelatin into the avocado oil. Add the coconut sugar, coconut butter (softened in the microwave for about ten seconds) and honey. Beat until creamy and smooth.

Next add in the coconut flour, arrowroot, vanilla powder, salt, baking soda, and cream of tartar. Beat well. Finally, add in the shredded coconut, and beat until incorporated. The dough will resemble crumbs. Dump the dough out onto a parchment sheet, and form a ball. Press the ball flat, and add a second sheet of parchment on top so you can roll out the dough without it sticking to your rolling pin. Roll the dough to 1/4 inch thickness. Use a heart shaped cookie cutter to cut out the cookies. I used a 3 3/4″ Wilton cookie cutter which made 6 cookies.

Cutting Out Heart Valentines Day Cookies

Carefully move the cookies to a parchment lined baking sheet.

Bake for approximately ten minutes until the cookies are brown on the edges. Remove from the oven and cool completely on the cookie sheet. Don’t attempt to move the cookies until they are cool, or they will break. Once cooled they are sturdy.

Make the icing

Ingredients:

1/4 Cup of Organic Shortening

2 Teaspoons of Honey

1/2 Teaspoon of Beet Powder (I used this)

Beat the ingredients together and spread a heart shape onto your cooled cookies leaving a 1/2 boarder all around.

Makes 6

Gluten Free Crispy Cinnamon Raisin Cookies

Chewy and crispy cookies are my jam this month! There is something about sinking your teeth into a chewy cookie that has the warmth of cinnamon in it and soft raisins, plus the crispiness of brown rice cereal that is just magic.

This new cookie recipe is a low allergen recipe. What is low allergen? I mean it is free of the top allergens. It is gluten free, dairy free, egg free, nut free, corn free, and soy free. Sweetened with honey, it is also refined sugar free. I am very pleased with the structure of these cookies too. The crumb is very nice.

Gluten Free Crispy Cinnamon Raisin Cookies

Preheat your oven to 350° F. Lay out a large cookie sheet lined with parchment paper or two small cookie sheets.

Ingredients:

1/2 Cup of White Rice Flour (I used this)

1/4 Cup of Organic Shortening

1/4 Cup of Good Honey

1/3 Cup of Crispy Brown Rice Cereal (I used this kind)

1 Tablespoon of Coconut Flour

1/3 Cup of Raisins

2 Tablespoons of Coconut Butter, (warm until soft in the microwave, be gentle)

1 Tablespoon of Gelatin (I used Vital Proteins)

1/2 Teaspoon of Vanilla Extract

1/2 Teaspoon of Cinnamon

1/2 Teaspoon of Baking Soda

1/4 Teaspoon of Sea Salt

1/8 Teaspoon of Nutmeg

Directions:

In a medium mixing bowl, cream together with an electric hand mixer the shortening, Honey, Vanilla Extract, and warmed Coconut Butter until light and creamy.

Sift together the White Rice Flour, Coconut Flour, Cinnamon, Nutmeg, Baking Soda, Salt and Gelatin.

Add the dry ingredients to your shortening and honey mixture and beat until incorporated. Mix in the Crispy Brown Rice Cereal and Raisins.

With a tablespoon scoop,  scoop the cookie dough into balls. Roll them into rounds between your hands, and place them on your prepared cookie sheet. Flatten the cookies with the bottom of a glass, Make sure the cookies have 2 inches between them on the sheet. Bake in your preheated oven for 9 – 10 minutes until they are golden brown.

Makes 1 dozen cookies.

Allergen Friendly, Chewy and Crispy Cookies!

 

Chocolate Peppermint Reindeer Cookies

I’ve been holding onto this cookie for way too long. I can’t wait anymore to share it with you. I just made another batch today, and was asking myself, why haven’t you blogged this yet?

The beauty of this cookie is not only how scrumptious it tastes, but it is versatile! You can make cut out cookies or thumbprints and put the frosting in the middle. The thumb print will take less time, but is equally as delicious!

Chocolate Peppermint Reindeer Cookies

Preheat your oven to 350º degrees.

Ingredients:

1/2 Cup of Coconut Flour

1/4 Cup of Avocado Oil or Coconut Oil

3 Tablespoons of Coconut Butter

3 Tablespoons of Maple Syrup

2 Tablespoons of Cacao Powder

1 Tablespoon of Grass Fed Gelatin

1 Teaspoon of Pure Vanilla Extract

1/4 Teaspoon of Sea Salt

1/4 Teaspoon of Cream of Tartar

1/4 Teaspoon of Baking Soda

1/8 Teaspoon of Peppermint Extract

Directions:

Place two cookie sheets, lined with parchment out, and set aside.

In a medium mixing bowl, add the Avocado Oil, Maple Syrup, Softened Coconut Butter, Vanilla Extract, and Peppermint Extract. Blend until combined. Then, sprinkle the Gelatin over the liquid mixture, and beat for one minute. Add in the Coconut Flour, Cacao Powder, Sea Salt, Baking Soda and Cream of Tartar, and beat for one more minute.

Place the cookie dough onto a sheet of parchment, add another parchment sheet on top, and roll to 1/4 inch thickness. Refrigerate the rolled dough for ten minutes. Using a reindeer cookie cutter, cut out shapes in the dough. Carefully remove the dough around the shapes, then lift the shapes with an offset spatula onto your prepared baking sheets. Re-roll the dough scraps as necessary to cut out more cookies. If it gets too soft to handle place it back in the refrigerator for ten minutes.

Bake the cookies at 350º degrees F. for 9 to 10 minutes until set and the edges are starting to brown. Remove from the oven and cool completely.

For the icing. In a small mixing bowl with an electric mixer, beat together:

3 Tablespoons of Organic Shortening

2 Tablespoons of Coconut Butter (softened)

1 Tablespoon of Honey

1/2 Teaspoon of Vanilla Extract

1/8 Teaspoon of Sea Salt

Using a small piping bag, pipe decorations on the cookies. Alternately, spread the icing onto the cookies. Top each Reindeer with a dried cranberry half for the nose!

For thumbprints, scoop the dough with a tablespoon cookie scoop into balls. Make a print with your thumb in the center, and bake for 10 to 12 minutes. Fill with the icing.

Approximately 18 rolled cookies

Banana Crunch Cookies

Make these crunchy cookies reminiscent of banana cream pie and pecan sandies.

They have a wonderful caramel banana flavor and the texture of a pecan sandie.

Using banana chips is they key to the crunch! I crushed the banana chips to resemble chopped nuts, and stirred them into the dough. Then I sprinkled some extra crushed banana chips on top.

You can use honey or maple syrup in this recipe.

Banana Crunch Cookies

Ingredients:

1/2 Cup of Banana Chips (I use these. The ingredients are just bananas and coconut oil)

1/2 Cup of Coconut Flour

1/4 Cup of Avocado Oil

3 Tablespoons of Coconut Butter (softened)

2 Tablespoons of Coconut Sugar

2 Tablespoons of Honey or Maple Syrup

1 Tablespoon of Grass Fed Gelatin (I used this kind)

1/4 Teaspoon of Vanilla Powder (Vanilla Extract if not strict AIP)

1/4 Teaspoon of Ground Cinnamon

1/4 Teaspoon of Ground Mace

1/4 Teaspoon of Sea Salt

1/4 Teaspoon of Baking Soda

1/4 Teaspoon of Cream of Tartar

Directions:

Preheat your oven to 350° degrees F.

Lay out a cookie sheet lined with parchment paper.

Crush the banana chips using a small food processor (or you can put them in a ziplock back and pound them with a rolling pin until they resemble small chopped nuts).

In a medium mixing bowl, add the avocado oil. Then, sprinkle the oil with the grass fed gelatin, and beat with an electric hand-held mixer. Add the coconut sugar and honey, beat. Soften the coconut butter in the microwave for a few seconds, then add it to the bowl and beat until creamy and incorporated. Add the coconut flour, vanilla powder, cinnamon, mace, sea salt, baking soda and cream of tartar and mix until combined. Add 3 tablespoons of crushed banana chips to the cookie dough and mix. Reserve the remaining crushed banana for the tops. Using a tablespoon cookie scoop, scoop up the dough, then pack it firmly into the scoop before releasing it onto the prepared cookie sheet. You will have 9 cookies. Flatten each cookie with the palm of your hand. Sprinkle the remaining crushed banana chips evenly onto each cookie. Bake in your preheated oven for 9 minutes.

Cool completely on the cookie sheet.
