Raspberry Blackberry Mango Smoothie

Are you ready for a super delicious, berry infused, smoothie to jump start your day?

This smoothie has your daily allowance of selenium with the addition of just two Brazil nuts! Brazil nuts are a rich source of selenium. Selenium is one of the nutrients that helps regulate thyroid function, as well as boost immunity, and so much more. Learn  more here from Dr. Axe on the benefits of selenium. Other good food sources of selenium are liver, eggs, grass fed beef, yellowfin tuna, cooked halibut, sardines, turkey, and spinach.

The berries in this smoothie are fantastic sources of Vitamin C, Magnesium and Fiber. Mango is great for the skin and digestion, as well as a good source of Vitamin C and Fiber. I added almond butter for healthy fat and some protein, and ground flax. There is an option to add in Grass Fed Collagen (I have it every day in my smoothies no matter what kind I make for my hair, skin, nails and gut health. It is tasteless, and also is a source of protein.) The lime juice gives the smoothie an extra zip like a sweet tart, and coconut water is very hydrating. I just love the flavor and color of this health promoting smoothie!

Ingredients:

1 Cup of Coconut Water

1/2 Cup of Frozen Raspberries

1/2 Cup of Frozen Blackberries

1/2 Cup of Fresh or Frozen Mango

2 Brazil Nuts (I use this gluten free brand)

1 Tablespoon of Almond Butter

1 Rounded Tablespoon of Grass Fed Collagen (optional)

1 Tablespoon of Lime Juice

1 Rounded Teaspoon of Ground Flax

1/2 Cup of Crushed Ice

Directions:

Add all the ingredients to a blender and blend until smooth. Pour into a tall glass and add a straw. Enjoy!

Supercharge Kiwi Green Smoothie

We are into mid-October already, the winter season is almost here as well as the holidays, and school is in full swing! My two teenage daughters have super busy schedules this year, as well as myself and Doug. Our whole family starts their mornings with a healthy smoothie every weekday, because they make us feel so good all morning! I am happy everyone is leaving supercharged with great nutrition before they go out the door, and we even got our 22 year old son, Jeffrey on board! What convinced him was not only that they tasted good, but how he felt having them! Young men are tough to convince, you know that invincibility and all.

So, we are big on smoothies here at our house, and especially when they have some leafy greens in them. Did I ever tell you that when my husband, Doug, started having green smoothies consistently five years ago his grey hair almost completely disappeared? He noticed the way he felt was different too, more energized and lighter. He has gotten asked if he colors his hair. If you knew him, you would know that no way would he do that being a no fuss, get it done, kind of guy. It was all the antioxidants in smoothie form easily accessible to his body!

I love the immune boosting benefits, fiber and nutrients in this delicious new green smoothie recipe! Kiwi is an amazing addition to a smoothie, because just one kiwi packs 106% RDA of Vitamin C! They are also a good source of digestive enzymes and fiber. There are two kinds of leafy greens in this smoothie, kale and spinach. Kale and Spinach contain Vitamin A, Vitamin K, Calcium and Vitamin C, Antioxidants, Fiber, and are detoxifying plus so much more! I added avocado for healthy fat and creaminess and frozen banana. There is also a splash of lemon juice and a teaspoon of raw honey.

I will be writing some new healthy smoothie recipes the next few months that are palate pleasing, because healthy smoothies should be delish! You can choose from them based on your preferences and health goals. I recommend rotating them. Supercharge Kiwi Green Smoothie

Ingredients:

1 Kiwi (ripe and peeled)

1/2 Cup of Frozen Green Grapes (You can use unfrozen)

1/2 Cup of Frozen Kale

1/2 Cup of Frozen Leafy Spinach

1/2 Frozen Banana (I keep a bag of peeled, ripe bananas in my freezer cut into pieces)

1/4 Avocado (ripe)

1 Tablespoon of Lemon Juice

1 Teaspoon of Raw Honey

1/4 Teaspoon of Vanilla Extract

1/2 Cup of Crushed Ice

Directions:

Place all the ingredients in a blender and blend on high until smooth and creamy. Pour into a tall glass and add a straw. 🙂

Chocolate Banana Quick Bread (Grain Free)

Who doesn’t love a portable quick bread that you can pack? My kiddos like a slice in their lunches, and I can feel good about the great ingredients in this recipe knowing it is good for them, and me, and sweet at the same time.  It’s mostly those bananas with a touch of good quality honey baby! Quick breads are supposed to be soft, but not mushy, and I totally consider them a comfort food. How many of you had Mom’s or Grandma’s that made quick bread when you were young? My favorite, and it’s a classic, is banana bread.

Here is a healthy spin on Banana Quick Bread. It is chocolatey too with the addition of magnesium rich raw cacao! It also contains nice amounts of potassium, protein, and uses unprocessed, real food ingredients.

Preheat your oven to 350º degrees. Line a 8 inch loaf pan with parchment paper. This keeps the loaf from sticking and helps it lift right out of the pan, so leave some edges sticking out to grab on to.

Ingredients:

2 Cups of Superfine Almond Flour

2 Tablespoons of Coconut Flour

1/2 Cup Raw Cacao

1 Teaspoon of Baking Soda

1 Teaspoon of Baking Powder

1 Teaspoon of Cinnamon

1/2 Teaspoon of Allspice

1/2 Teaspoon of Sea Salt

Whisk together the dry ingredients in a bowl and set aside.

4 Ripe Bananas with black spots

4 Eggs (I used soy free eggs due to a sensitivity)

1/4 Cup Honey, I used raw honey

1/4 Cup Coconut Oil, melted

1 Teaspoon of Vanilla Extract

In a food processor, add all the wet ingredients and blend until completely smooth. Alternately, using a hand mixer, do the same. It will just take longer to incorporate, making sure the bananas are completely smooth.

Add in the Dry Ingredients, and continue to mix until completely blended. Pour into your prepared loaf pan. Bake in the preheated 350º oven for 60 to 75 minutes, or until a toothpick inserted into the center of the loaf comes out clean with just a few crumbs attached. Cool in the loaf pan five minutes on the counter before removing the loaf to cool completely before slicing.

This bread keeps for three days at room temperature. For longer storage, refrigerate the loaf well wrapped.

Pumpkin Pecan Quick Bread (Grain Free)

Pumpkin Pecan Bread Loaf

This loaf of Pumpkin Pecan Quick Bread is moist and delicious! It is also grain free. The structure of the loaf is fantastic.  There is 24 grams of protein in this recipe from the eggs, as well as healthy Omega 3’s and Vitamins A, D, E and K from the yolks, along with 36 grams of protein from the Almond Flour. I used soy free eggs since I can eat eggs without problems if they are soy free. I consumed a fair amount of soy in the past and developed an intolerance to it, and it is present in the eggs of chickens who are fed soy. You can read more about this topic here. You can use any egg you like in the recipe. I recommend a good quality, pastured one.

The bread comes together quickly, just like a quick bread should! It is great for breakfast, a snack, or packed in lunches!

Pumpkin Pecan Quick Bread

Ingredients:

1 1/2 Cup Superfine Almond Flour

1 Tablespoon Coconut Flour

1 Teaspoon Baking Powder

1 Teaspoon Baking Soda

1/2 Teaspoon Sea Salt

1/2 Teaspoon Cinnamon

1/4 Teaspoon Cardamom

1/8 Teaspoon Nutmeg

1/8 Teaspoon Cloves

1/2 Cup Chopped Pecans

1 Cup Pumpkin

4 Eggs

1/4 Cup Honey

1/4 Cup Coconut Oil, melted

1 Teaspoon Vanilla Extract

Directions: Preheat the oven to 375º degrees. Line a 8″ loaf pan with parchment paper.

In a medium bowl, whisk together the dry ingredients through the cloves. Set aside. In a small bowl, with a hand held mixer blend together the pumpkin, eggs, honey, coconut oil and vanilla on high speed for 1 minute.

Add the wet ingredients to the dry, and blend with a handheld mixer until completely smooth on medium speed. Fold in the chopped pecans, reserve a few pecans to sprinkle on the top.

Place in the preheated oven, and bake for 50 minutes. Remove from the oven. Use the sides of the parchment paper to lift the loaf from the pan. Cool completely before slicing.

You’ve Got the Beet! – Day 7 – Seven Days of Smoothies

Today is the final smoothie recipe of the Seven Days of Smoothies series! You’ve Got the Beet! has a respectable amount of fiber from figs (6% per medium fig). Sweet delicious figs also contain calcium, potassium, magnesium, Iron, Vitamins B, C, Selenium, Phosphorus and Zinc. There are two colorful vegetables incorporated into today’s smoothie, (you guessed it beet, and also carrot). Strawberries are a low sugar addition to this smoothie and provide over 140% RDA of Vitamin C. Choose your favorite dairy free milk to add, and don’t forget the protein!

Ingredients:

1 Cup Frozen Strawberries

2 Turkish Figs (soak them if they are not soft for ease in blending)

3 Baby Carrots

1 Slice of Beet (about a Tablespoon)

1/2 Cup Dairy Free Milk

2 Tablespoons Pomegranate Juice Concentrate

1 Tablespoon Fresh Squeezed Lime Juice

Blend it thoroughly to incorporate those figs! Then add:

2 Tablespoons of Collagen Powder and/or Your Favorite Protein Powder (add after initial blending and blend just until incorporated to prevent foaming).

Day six will take you to a warm paradise with the pineapple and ginger in this smoothie! Fresh ginger is wonderful for digestion, has antiviral properties, is anti-inflammatory, and is a warming food. The frozen banana makes this a creamy sweet smoothie, and the fresh lemon juice brightens the flavors.

Ingredients:

1 Frozen Banana, Sliced

1/2 Cup Frozen or Fresh Pineapple Chunks

1/2 Cup Orange Juice (no sugar added)

1 teaspoon minced, fresh ginger root

1 Tablespoon of Fresh Squeezed Lemon Juice

2 Tablespoons of Grass Fed Gelatin or Your Favorite Protein Powder (add after initial blending and blend just until incorporated to prevent foaming)

Blend all the ingredients together until very smooth. Then add the gelatin or protein powder and blend briefly.

Apple Pie Microwave Mug Muffin

My family loves my mug muffin recipes, and they have been asking for an apple pie mug muffin! I can’t wait to share it with you also! Mug muffins are so awesome…….they are fast, fresh, and cater to an individuals preference, because you make one at a time! You don’t have a whole batch to consume before they get stale, and if you feel like apple, pumpkin, berry, or whatever you have in the house, you get to choose.

This muffin takes two minutes in the microwave, and you can prep it and refrigerate it the night before if your morning is rushed. Then all you have to do for breakfast is pop it in the microwave for two minutes, and it is ready! Even so, they only take ten minutes to prep and two minutes to cook if you make it right when you want it.

It is a nutritious, grain free, guilt free breakfast or snack! I personally like to make one in the evening, and my children like to make them for breakfast. This Apple Pie Mug Muffin is sweetened with just a tablespoon of honey, has a healthy fat and protein rich egg in it, and the apple of your choice, which is a good source of fiber as well as the coconut flour! I used Fuji apple in the muffin pictured below. If you like an apple with more tartness, try a Granny Smith, but any kind will work! Use your favorite!

Ingredients:

1 Large Egg

1/2 Cup Chopped Apple (this is about half a medium apple, peeled and cored)

2 Tablespoons Apple Sauce

1 Tablespoon Coconut Flour

1 Tablespoon Almond Flour

1 Tablespoon Honey

1/4 Teaspoon Cinnamon

1 Teaspoon Vanilla Extract

A Dash of Himalayan Pink or Sea Salt

Directions:

In a bowl, whisk together all the ingredients except the apple. Fold in the apple, reserving a little bit for the top. Spoon the batter into a mug. Sprinkle with the remaining diced apple. Microwave on high for 2 minutes.

Serve! Be careful, it is hot and delicious, and smells soooo good!

Green Smoothies are nutrition powerhouses and a great way to ensure you are getting lots of very important nutrients, fiber, phytonutrients, calcium, and cancer preventative greens, vegetables and fruit in large varieties. They help your hair and nails grow faster….this is due to the nutrient absorption. Blending a smoothie is like predigesting your food, so your digestive system doesn’t have to work as hard to access the benefits. The energy they give you (which isn’t a sugar boost energy you get from too many carbohydrates) is sustainable for hours. They are a great addition to your diet, and you can reap many benefits from them. Drinking green smoothies makes it easy to get in your daily servings of vegetables. I know a lot of people do not eat enough vegetables, and this is an easy way to ensure you do!

If you have never had a green smoothie, you may have to start out a little sweeter when you begin. After your taste buds adjust, and you start feeling like you can conquer anything because you feel so fantastic, you will learn to love the green taste along with the fruit flavor and know you are feeding your body something oh so good for it! I actually love the taste of green smoothies without a lot of fruit now. When this happens, you get to join the seasoned green smoothie club. 🙂

I like to rotate the greens I use in my smoothies to get as much variety as possible. Different greens taste better with certain fruit and vegetables. Experiment and see what works well for you.

There are a few things to consider before you start drinking green smoothies regularly. If you are susceptible to kidney stones, you will want to avoid too many high oxalate foods if your doctor has put you on a low-oxalate diet.  These would be foods such as spinach, kale, nuts and kiwi. Here is a list of low oxalate choices for your smoothies.

Choose lower sugar fruit, such as berries if you are monitoring your blood sugar levels, and consult with your doctor if you are on any medication like blood thinners or thyroid medication before drinking daily green smoothies to rule out any food you should avoid adding. Food is medicine.

The smoothie recipe I am sharing with you today uses kale. It is on the sweeter side of a green smoothie due to the addition of kiwi (Excellent source of Vitamin C), Watermelon (lycopene which has sun protective properties and is hydrating) and banana. The raw cocao contains antioxidants and is a source of energy, and chamomile is a mild diuretic (helps reduce water retention).

Kale has a stronger flavor than colorful lettuces and spinach which are mild and good starter choices. Kale is an excellent source of calcium, iron, beta-carotene and vitamin K.

Try a green smoothie challenge…….30 days, one a day, preferably in the morning to start your day, but anytime is okay.

Ingredients:

1 Kiwi, peeled

1 Cup Cubed Watermelon

2 Cups Kale Leaves, Stems Stripped

½ Ripe Banana

1 Teaspoon Raw Cacao Powder

1 ½ Cups Chamomile Tea Chilled

1 Cup Ice Cubes

1 Tablespoon Tahini or Sunbutter

Blend in a high speed blender until smooth. Drink slowly making chewing motions to help the digestion begin in your mouth.

Good Morning Gorgeous!!! Yes, you are a gorgeous person! Today I have a fantastic new Smoothie Bowl Recipe to share with you that will help make your insides gorgeous too, and when we are gorgeous on the inside, it naturally makes us glow outward! Wouldn’t you agree?  This smoothie is a nourishing breakfast bowl full of only real food, fiber, protein, and you are getting in a serving of greens all in an easily assimilated, highly digestible way! I am a big fan of smoothies in the morning, because our digestive system has been resting as we sleep. It is an optimal time to put a blended meal in our bodies to quickly absorb the nutrients and keep us energized throughout the morning, with just the right amount of calories. This smoothie has low sugar berries, banana and a few slices of mango. The flax helps keep you regular, the seed butter adds healthy fat and protein, and the sliced almonds add crunch!
Here is the recipe. I highly recommend you give this a try! It is such a beautiful way to start your day. The colors nourish your soul (we eat with our eyes too!) and the food nourishes your body. Make a commitment today to do this for yourself!

Ingredients:
1/2 Cup Fresh Raspberries
1/2 Cup Fresh Strawberries
1/2 Cup Fresh Blueberries
1 Ripe Banana
1 Cup Packed Baby Spinach
1 Tablespoon Sunflower Seed Butter or Tahini
2 Teaspoons Ground Flax Seed
1/2 Cup Crushed Ice
1/4 Cup Cold Water
2 Teaspoons of Sliced Almonds
Sliced Mango for the top

Directions: Place all the ingredients into a blender except the Sliced Almonds and Mango and reserving some each of the Raspberries, Strawberries and Blueberries to scatter on the top. Blend on high until smooth. Pour into a bowl (or bowl mug). I am a fan of Affirmation Bowl Mugs like this one.  Scatter with reserved berries, a few slices of mango, and sliced almonds.
Sit down and savor this highly nourishing breakfast. It is a wonderful way to care for your body that will be your home while on this planet!
