This refreshing drink is bursting with vitamin C and skin glowing Mango!  The real ginger aids in digestion and is delicious with the other flavors and sparkling water. It is delightful!

I am not on the low carb band wagon. I actually tried it a few years ago, and found that the activity levels I sustain all day, and my hormone balance, requires moderate carbohydrates, and the benefits of fruit in my diet were fiber, vitamins, minerals, phytonutrients, disease risk reduction, and glowing skin! I am a strong advocate for real food carbohydrates in the form of starchy vegetables and fruit, as well as other health promoting grains if tolerated. We are all unique bioindividuals and need different things at different times and stages of our lives. I have successfully added back in quinoa and Greek yogurt occasionally much to my delight!

Mango Orange Refresher with Ginger and Banana and Sparkling Water

Mango Orange Refresher

Two Servings

Ingredients:

1 Cup of Fresh, Ripe Diced Mango

1 Ripe Banana

1″ Nub of Peeled Fresh Ginger Root

1/2 Cup of High Quality Orange Juice or Freshly Squeezed

1/2 Cup of Sparkling Mineral Water (I used this brand)

1 Cup of Crushed Ice

Directions: Blend all the ingredients except the Sparkling Mineral Water in a blender until smooth. Add the mineral water and just incorporate. Pour into two tall glasses!

Serve!

Raspberry, Blackberry, Mango Smoothie

Raspberry Blackberry Mango Smoothie

Are you ready for a super delicious, berry infused, smoothie to jump start your day?

This smoothie has your daily allowance of selenium with the addition of just two Brazil nuts! Brazil nuts are a rich source of selenium. Selenium is one of the nutrients that helps regulate thyroid function, as well as boost immunity, and so much more. Learn  more here from Dr. Axe on the benefits of selenium. Other good food sources of selenium are liver, eggs, grass fed beef, yellowfin tuna, cooked halibut, sardines, turkey, and spinach.

The berries in this smoothie are fantastic sources of Vitamin C, Magnesium and Fiber. Mango is great for the skin and digestion, as well as a good source of Vitamin C and Fiber. I added almond butter for healthy fat and some protein, and ground flax. There is an option to add in Grass Fed Collagen (I have it every day in my smoothies no matter what kind I make for my hair, skin, nails and gut health. It is tasteless, and also is a source of protein.) The lime juice gives the smoothie an extra zip like a sweet tart, and coconut water is very hydrating. I just love the flavor and color of this health promoting smoothie!

Ingredients:

1 Cup of Coconut Water

1/2 Cup of Frozen Raspberries

1/2 Cup of Frozen Blackberries

1/2 Cup of Fresh or Frozen Mango

2 Brazil Nuts (I use this gluten free brand)

1 Tablespoon of Almond Butter

1 Rounded Tablespoon of Grass Fed Collagen (optional)

1 Tablespoon of Lime Juice

1 Rounded Teaspoon of Ground Flax

1/2 Cup of Crushed Ice

Directions:

Add all the ingredients to a blender and blend until smooth. Pour into a tall glass and add a straw. Enjoy!

Peach Mango Sorbet

Peach Mango Sorbet - Paleo

The peaches are so good this year, and I have been finding ways to enjoy them almost every day while they are fresh and in season. One of the ways I have been eating them is by making a fresh sorbet with peaches and mango in my blender for instant sorbet. I peel and dice the fresh fruit and freeze it first. Find the full recipe below.

Peaches are packed with nutrition and soluable fiber and aid digestion. Here’s a great article on 18 Amazing Benefits of Peaches including skin health, vision, immune system and anti-aging properties. I added just 1 1/2 tablespoons of low glycemic coconut sugar to the recipe that serves three. It is important to buy organic peaches, because they are on the dirty dozen list.

Here’s the simple and delicious recipe for you to enjoy!

Peach Mango Sorbet

Ingredients:

2 Organic Peaches, Washed, Peeled, Diced and Frozen

1 Mango, Washed, Peeled, Diced and Frozen

1 Tablespoon of Fresh Squeezed Lemon Juice

1 1/2 Tablespoons of Coconut Sugar

Directions: Add all the ingredients to a high speed blender with a plunger (I used a Vitamix) and blend until thick and creamy. Serve immediately, or place the sorbet in a glass freezer dish and freeze for later. If you save it for later, remove the sorbet from the freezer and let it sit on the counter for ten to fifteen minutes to soften.

Mango Cashew Chicken Salad

Mango Cashew Chicken Dinner Salad

This salad is inspired by one of my favorite salads from Red Mesa Grill in Northern Michigan. I order it every year from their gluten free menu and it is so good, I decided to recreate it at home adding my own spin on it.

The salad has a delicious combination of sweet juicy mango, crunchy cashews, tart cranberries, onion and roasted chicken. The mango dressing is bursting with vitamin C. It is a perfect Summer main dish salad!

Begin with making a marinade for the chicken breasts:

Marinade:

1/4 Cup of Olive Oil

Zest and Juice of 1 Lime

2 Cloves of Smashed Garlic

2 Tablespoons of Apple Cider Vinegar

1/2 Teaspoon of Sea Salt

Whisk the marinade together well. Add 4 boneless, skinless chicken breasts to a gallon zip bag, and pour the marinade over the chicken. Seal the bag, and place it flat in the refrigerator for 3 hours, flipping once halfway through to ensure the chicken is evenly seasoned. You can refrigerate the chicken for up to 24 hours in the marinade.

Now prepare your salad dressing.

Mango Salad Dressing:

Ingredients;

1 1/4 Cup of Ripe Mango, diced

1/4 Cup of Good Olive Oil

2 Tablespoons of Fresh Squeezed Lime Juice

2 Tablespoons of Fresh Cilantro

2 Tablespoons of Raw Apple Cider Vinegar (I use this kind)

1 Green Onion, sliced

1 Teaspoon of fine Sea Salt (I like this brand)

Blend the mango and olive oil in a blender until completely smooth and creamy. Add the lime juice, salt and cider vinegar and blend to incorporate. Now, add the fresh scallion and cilantro, and pulse the blender just until you can see tiny bits of scallion and cilantro. You want to be able to see it and not completely incorporate it into the dressing.

Refrigerate the dressing. This will keep 3 days in the refrigerator.

Now to make the salad! 🙂

Mango Cashew Chicken Salad Prep

Mango Cashew Chicken Salad Ingredients:

4 Boneless, Skinless Chicken Breasts

1 – 5 oz. Container of Organic Baby Romaine, washed and spun dry

1/2 Head of Organic Iceberg Lettuce, washed, spun dry and torn into bite-sized pieces

1 Ripe Mango, Diced in to 1 inch pieces

1/2 Cup of Salted or Raw Cashews

1/4 Cup of Apple Juice Sweetened Dried Cranberries (I use this brand)

1/4 Cup of Green Onion, Sliced

1/4 Cup of Red Onion, Finely Diced

Additional Sea Salt for Sprinkling

Directions:

Preheat the oven to 375° degrees. In a cast iron skillet, add 2 tablespoons of olive oil and heat on medium-high. Remove the chicken breasts from the marinade, and sprinkle them with additional sea salt, and add them to the pan. Brown the breasts two minutes per side, until golden brown, but not cooked through. Place the chicken on a baking sheet, and place them in the preheated oven. Bake for 20 minutes or just until the chicken reaches 165° at the center. Remove the chicken from the oven, and set aside to cool while you prepare the rest of the salad.

Mound the salad greens in a large bowl. Drizzle with a generous amount of Mango Salad Dressing. Sprinkle the mango, cashews, cranberries, green onion and red onion on top. Slice your cooked chicken breasts on a diagonal (they can still be warm) and arrange the breasts on the top of the salad. Sprinkle with some additional sea salt to taste.

Serve!

4 Large Dinner Sized Servings (1 Chicken Breast per person)

 

 

 

 

Tropical Matcha Green Tea Ice Cream

It’s Mother’s Day weekend! If my Mama lived closer, I would make her this delicious Tropical Matcha Green Tea Ice Cream for dessert, because it is absolutely delicious, and also because it has nutrient rich ingredients that will make her skin glow and benefit her body!

I have to admit, I am passionate about Matcha. I started drinking it years ago because of the rich green tea flavor! I love the taste, and the health benefits were an added bonus! Matcha is packed full of antioxidants, and even though it contains caffeine, it calms and relaxes the body while it energizes. It contains high levels of chlorophyll, vitamin C, selenium, chromium, zinc and magnesium. If that wasn’t enough, there are EGCG’s in Matcha that lower blood sugar and cholesterol. Matcha detoxifies, increases metabolism, boosts memory and concentration, and is disease and cancer preventative. Wow! Who doesn’t want all that?

Okay, so that is one of the ingredients in this creamy, tropical ice cream. I also added pineapple, mango, lemon juice (Vitamins A and C), and avocado which all beautify your skin! There is coconut milk and coconut oil for healthy fat (along with the avocado). The avocado adds extra creaminess with a neutral flavor, and finally natural honey. So, let’s eat ice cream in a very healthy way!

Ingredients:

2 Cups of Fresh Cubed Pineapple

1 Ripe Mango

1 Can Full Fat Coconut Milk (No additives for SCD Diet)

1/2 Cup Good Honey (clear if eating SCD Low FodMap)

1/2 Ripe Avocado

2 Tablespoons of Matcha Green Tea Powder

1 Tablespoon Fresh Squeezed Lemon Juice

1 Tablespoon Melted Coconut Oil

Directions:

1. In a blender, blend all the ingredients.

2. Refrigerate Ice Cream Mix for at least 4 hours or overnight.

3. Churn in an ice cream maker. I love this one.

Mango Banana Blender Ice Cream

This creamy blender ice cream is a guaranteed way to satisfy a sweet tooth and a craving, and it only takes seconds in the blender! Three ingredients is all you need, and you will have a nutritious, figure friendly ice cream without the guilt! All you need is Bananas, Mango and Vanilla Extract. I always keep frozen bananas on hand, because they are so creamy when blended into smoothies.

Most everyone knows that bananas are a good source of potassium, but did you also know they are a source of vitamin B6 which our body does not store and is used to make antibodies to fight infection? Bananas are also a source of vitamin C and have 3 grams of fiber each.  The Mango packs a punch of vitamin C  (96% in an average sized mango) as well as vitamin A, fiber and some calcium.

Ingredients:

2 Frozen Ripe Bananas, cut into chunks

1 Cup of Frozen Mango cubes, the riper the better

1/2 Teaspoon alcohol free for AIP Paleo or  Pure Vanilla Extract, No Additives,

Directions:

Place the ingredients in a high speed blender that comes with a plunger, and blend on high pushing the fruit down with your plunger until it is creamy and blended. Serve immediately.
