How’s your August so far? The Summer is flying by, and I have been trying to soak up every minute of it by getting outside as much as possible. I have been taking these Superfood muffins with me! The Goji berries and cinnamon gives them a delicious earthy, whole grain flavor.

My daughter, who is going to be a Senior this year, has her first job over the Summer at a very busy ice cream shop, and we are getting ready for Senior Portraits this month. It’s true, they grow up too fast. It’s been an adjustment for her younger sister, who is the baby of the family, but we have been enjoying Mother/Daughter one on one time.

What’s been your favorite thing so far about this Summer? I hope you are living with an attitude of abundance. There is always something that is good, and having a good attitude can completely change your outlook. Being happy and bright is a habit that can be cultivated until it just comes naturally, just as negative thoughts and attitudes are. Our bodies and health respond to our attitude, moods and beliefs. So, take time every day to do something you love, and also embrace your have to do’s. It really doesn’t serve us at all to moan and groan about having to clean, go to work, grocery shop, etc. Doing it with a good, can do attitude makes life so much better! Cultivate happiness.

So, here is this amazing muffin recipe that promotes health and tastes delicious!

Superfood Cinnamon Goji Berry Muffins

Soak your dried goji berries in water overnight in the refrigerator, or for two hours at room temperature making sure the berries are completely covered with water.

Ingredients:

1 1/2 Cups of Diced Zucchini

3 Eggs

1/2 Cup of Coconut Flour

1/2 Cup of Soaked Goji Berries (Like these), soaked and drained

1/4 Cup of Coconut Sugar

1/4 Cup of Coconut Milk

1/4 Cup of Avocado Oil

1 Tablespoon of Ground Cinnamon

1 Teaspoon of Vanilla Extract

1/2 Teaspoon of Baking Soda

1/4 Teaspoon of Sea Salt

Directions:

Preheat your oven to 350° degrees F. In a food processor, add your diced zucchini and process to make crumbs. Add the eggs, and puree. Now, add the coconut sugar, avocado oil, cinnamon, coconut milk and vanilla. Process until creamy. Add the coconut flour, baking soda, and salt, and process for one minute. Finally, add all but two tablespoons of the goji berries and pulse just until combined.

Scoop the muffin batter into 12 muffin cups lined with muffin papers and sprinkle the remaining goji berries on top of the muffins. Bake in your preheated oven 25 to 35 minutes, or until the muffins spring back to the touch. Remove them from the oven, and cool five minutes in the pan before transferring to a cooling rack.

Happy Fall Y’all! It’s officially here, and I have a new Pumpkin Spice Muffin recipe for you with Chocolate Chips and Raisins that is grain free and Toddler Approved! My Grandson, Theodore, was here yesterday when I was testing them, and he LOVES them! Look at the pictures of him enjoying one below! 🙂 These muffins are sweetened with maple syrup, have healthy olive oil in them, pumpkin, raisins, spices, and my favorite allergen free dark chocolate chips!

Healthy muffins are great to have on hand, so I like that this recipe makes a larger batch. You can also freeze half of them.

Pumpkin Spice Muffins with Chocolate Chips and Raisins (Toddler Approved!)

Preheat your oven to 350º degrees F. Lay out two muffin pans with muffin wrappers. I like these unbleached natural baking cups. They never stick and there are no dyes in them. This recipe makes 17 muffins.

Ingredients For The Batter:

6 Pastured Eggs

1 Can of Pumpkin (I use this organic brand)

1/2 Cup of Coconut Flour

1/4 Cup of Olive Oil

1/4 Cup of Pure Maple Syrup

1/2 Cup of Raisins

1/2 Cup of Dark Chocolate Chips (I use this allergen free brand that is delicious!)

1 Teaspoon Vanilla Extract

1 Teaspoon Fresh Lemon Juice

1/2 Teaspoon Baking Soda

1/2 Teaspoon of Cinnamon

1/2 Teaspoon of Ground Ginger

1/4 Teaspoon of Sea Salt

1/8 Teaspoon of Ground Cloves

a pinch of Nutmeg or Mace

Ingredients for the Topping:

1/3 Cup of Raisins

1/3 Cup of Dark Chocolate Chips

Directions:

In a large mixing bowl, add the eggs, pumpkin, olive oil, maple syrup, vanilla and lemon juice. Beat with a hand held electric mixer until combined. Add the coconut flour, salt, spices and baking soda, and blend for two minutes. Fold in 1/2 cup of raisins and 1/2 cup of dark chocolate chips.

Scoop the batter with a muffin scoop into your prepared muffin pan. In a small bowl, mix together the raisins and chocolate chips. Then, sprinkle evenly on top of the muffins. tap very gently into the batter.

Bake in your preheated oven for 25 minutes, or until the tops spring bake when touched.

Remove from the oven, and cool for five minutes, then remove from the muffin tins and cool completely on a wire rack.

Coconut Flour Orange Quick Bread or Muffins

I am enjoying the Chocolate Chip Banana Muffins I shared so much that I decided to make an Orange Muffin version that can also be made into a loaf, because I like choices!  These healthy muffins are fantastic because the texture is fine and moist and without the grains and refined carbs. When baking with coconut flour, recipes require more liquid, because coconut flour is highly absorbent. So eggs are perfect, because they give the muffins protein and healthy fat from the yolks. Eggs in baking are great for leavening and texture as well.

The orange zest really bumps up the orange flavor, and fresh squeezed orange juice is used to enhance the texture, flavor and brightness of the muffin. I find muffins so cheery when I sit down to relax and read about something exciting like travel or planning a new garden! Coconut Flour Orange Quick Bread or Muffins

Preheat the oven to 325º degrees F. Set out a 12 cup muffin pan, or medium loaf pan if making the bread. Line the muffin pan with muffin papers, and if making the loaf, grease the pan and line it with parchment paper.

Ingredients:

6 Eggs

2 Bananas (ripe with some black spots)

1/2 Cup of Coconut Flour

1/3 Cup of Olive Oil (or Coconut Oil)

1/4 Cup of Collagen (optional but great for hair, skin, nails and digestion)

1/4 Cup of Fresh Squeezed Orange Juice

2 Tablespoons of Honey

1 Tablespoon of Orange Zest (make sure you have a fantastic peel for the most flavor)

1/2 Teaspoon of Vanilla Extract

1/2 Teaspoon of Baking Soda

1/4 Teaspoon of Sea Salt

If making the loaf – Thin Orange Slices including the peel, halved.

Directions: In a food processor, blend the bananas and eggs until no chunks remain and you have a creamy yellow mixture. Add the remaining ingredients, and process for two minutes. Scraping the sides of the processor once. Let the batter sit for 5 minutes. Scoop the batter into 12 muffin cups, or pour into your prepared loaf pan. If making the loaf, add the orange slices on the top decoratively. (See photo)

Bake in your preheated oven for 35 minutes if you are making the muffins, or until the tops spring back when lightly touched with your finger. For the loaf, bake for 65 to 70 minutes until a toothpick inserted in the center comes out clean. Remove from the oven and cool five minutes before removing the muffins or loaf from their pans to cool completely. Well, you can eat a warm muffin, but please cool the loaf completely…..it’s the baker in me. Add some decorative zested orange to the tops of your muffins if desired.

Chocolate Chip Banana Muffins (Dairy and Gluten Free)

I have been joking lately that I have a house full of chimps. I have had a difficult time getting a few black spotted bananas to bake with because my family is eating them so fast. I am not sure what has caused this sudden rise in banana consumption, but I am not going to complain too loudly when bananas are being chosen. I simply have learned to hide some so they get a chance to reach that black spotted stage that makes them perfect for baking!

I have been craving a chocolate chip banana muffin, and this one fits the bill perfectly. They are simple to whip up in a food processor, have protein from six eggs, healthy fat from olive oil (they make muffins very moist!) are mostly sweetened with bananas and just a touch of honey, and sprinkled with some dairy free chocolate chips. Chocolate Chip Banana Muffins (Dairy and Grain Free)

Preheat your oven to 350º degrees F. Line 12 muffin cups with non-stick muffin papers and set aside.

Ingredients:

6 Pastured Eggs

1/2 Cup of Coconut Flour (here)

2 Black Spotted Bananas

1/4 Cup of Olive Oil

2 Tablespoons of Honey

1 Teaspoon of Vanilla Extract

1 Teaspoon of Lemon Juice

1/2 Teaspoon of Baking Soda

1/2 Cup of Mini Chocolate Chips plus more for sprinkling (I use these dairy and gluten free ones)

Directions: In a food processor with a blade attachment, blend the eggs and banana until the banana is smooth. Add in the rest of the ingredients except the chocolate chips and blend for two minutes. Add in 1/2 cup of mini chocolate chips and pulse six times just until the chocolate chips are incorporated but not broken up. Scoop the batter into the prepared muffin cups and sprinkle with some extra chocolate chips. Bake for 20 to 25 minutes in your preheated oven until the tops spring back. Remove from the oven, and cool for five minutes before removing from the pan and cooling on a wire rack.

These keep at room temperature for three days. I only know this because I hid one, otherwise my son would have eaten them all. 🙂

Orange Currant Muffins

This new muffin recipe uses whole peeled oranges in it, which adds a lot of flavor! There are many benefits in eating food in it’s whole form the way nature made it, so I was very excited to come up with this recipe! There is no added sugar. They are sweet and flavorful from the banana, and oranges with an added benefit of carrots in the recipe. This is an ultra moist muffin and is egg free.

Directions:

Preheat your oven 350º degrees and line muffin pans with 16 natural liners.

Ingredients:

2 Flax Eggs (combine 2 Tablespoons of Ground Flax Seed and 6 tablespoons water, whisk and refrigerate 15 minutes)

1 Cup Very Ripe Banana (sliced and packed) this took 3 medium bananas, but measure

1/2 Cup Coconut Flour

1/2 Cup Superfine Almond Flour

2 Cups Orange Segments (no seeds, peeled)

2 Cups Peeled and Sliced Raw Carrots

1 Tablespoon Ground Cinnamon

2 Teaspoons Baking Soda

1 1/2 Teaspoons Pure Vanilla Extract

1 Teaspoon Apple Cider Vinegar

1/2 Teaspoon Himalayan Pink Salt or Sea Salt

1/4 Cup Dried Currants for the Tops

To Make the Muffins: Place all the ingredients except the dried currants in a food processor with a blade attachment. Pulse to start incorporating and chopping larger ingredients, then turn on and process for two minutes until completely blended. Fill each muffin cup almost to the top with a muffin scoop, refer to photo, (you should have 16 muffins) and sprinkle with dried currants, dividing evenly.

The muffins are sweet and moist! It is hard to believe they have no added sugars and are made completely with whole nutritious fruit!

Bake in the oven for 35 minutes. Enjoy!

Banana Walnut Muffins

Looking for an easy, no added sugar, healthy, grain free muffin? These Banana Walnut Muffins are sure to please! All you need is a food processor and a few ingredients. They are moist and have the perfect crumb. The sweetness comes from whole food – dates and banana. I like to make a double batch and freeze half for a quick and easy school day breakfast for the kids. Just thaw in the microwave.

Banana Walnut Muffins

To Begin:

Preheat your oven 350º degrees.

Ingredients:

2 Cups Cubed Zucchini (about 2 medium or 1 large)

1 Ripe Banana (with black spots)

1/2 Cup Coconut Flour

4 Medjool Dates, pitted

1/2 Cup Hot Water

2 Eggs

1 Teaspoon Pure Vanilla Extract (no additives)

1/2 Teaspoon Baking Soda

1/3 Cup Raw Walnuts

To Make The Muffins:

Line a 12 cup muffin pan with muffin liners.

Soak the pitted dates in the 1/2 cup of hot water for ten minutes. Meanwhile cube your zucchini and assemble the rest of the ingredients. Place the dates and soaking water in the food processor and puree together. Add the zucchini and banana and thoroughly puree. Add the eggs, coconut flour, vanilla and baking soda and puree until thoroughly blended and coconut flour has absorbed some of the liquid and it is the consistency of cake batter.

Using a muffin scoop or a 1/4 cup measuring cup, fill the muffin liners with the muffin batter. Top with walnuts, dispersing evenly. Bake in a 350º degree oven for 40 minutes. Remove from the oven and cool in the pan for ten minutes before placing on a wire cooling rack.

Enjoy these delicious muffins! They are less than 100 calories each and full of healthy ingredients you can feel good about.
