Chocolate Chip Cranberry Orange Biscotti


Biscotti is my all time favorite cookie! They just go so well with coffee. I like to munch on biscotti when I play cards with friends. What’s your favorite card game? Mine is Euchre. I hope you still take time to play cards if you enjoy it! It seems harder to find the time anymore, but always leaves me feeling happy and connected. Here’s a great recipe for a cookie with holiday flavors, but you can enjoy it anytime of year.

Chocolate Chip Cranberry Orange Biscotti On a Plate with a Pug Mug - Grain Free

It is made grain free with coconut flour and has heart healthy olive oil in it.

Chocolate Chip Cranberry Orange Biscotti

Note: If you are eating strict SCD Low FodMap, substitute chopped pecans or walnuts for the chocolate chips.

Ingredients:

1/2 Cup of Coconut Flour, scooped and leveled

2 Eggs

1/4 Cup of Olive Oil

1/4 Cup of Honey

1/3 Cup of Enjoy Life Dark Chocolate Chips (here is the link for Amazon, but they are available at many grocery stores as well)

1/4 Cup of Apple Juice Sweetened Dried Cranberries (I use these)

Zest of one Organic Orange

1 Teaspoon of Vanilla Extract

1/4 Teaspoon of Baking Soda

1/4 Teaspoon of Sea Salt

Directions: Preheat your oven to 350°F.

In a medium mixing bowl, add the eggs, honey, vanilla, orange zest and olive oil. Beat with a hand held mixer for one minute. Sift together the coconut flour, baking soda and salt, then add it to the wet mixture. Beat for two minutes until the batter begins to thicken. Then, fold in the cranberries and chocolate chips, distributing evenly.

Scoop the cookie batter onto a parchment lined cookie sheet, and using the sides of the parchment. Shape it into a rectangle measuring approximately 12″ x 4″ x 1″ high. Alternatively, you can shape it with slightly damp hands. This keeps the dough from sticking to your hands.

Bake in your preheated oven for 18 to 20 minutes, or until the edges are starting to brown.

Remove from the oven and cool on the sheet for one hour. Reduce your oven’s heat to 325° degrees. Place the cooled cookie log onto a cutting board, and with a serrated knife, carefully slice the log on a diagonal, cutting the cookies into long rectangles about 1 inch thick each.

Biscotti Ready For Second BakePlace the cut side down back onto the parchment paper, and bake 5 minutes per side. After the first 5 minutes, take the cookies out of the oven and flip them over to the other cut side. Take care not to over brown, as all ovens are slightly different. Remove the biscotti from the oven and cool completely.

Good Morning Everyone! I am so happy Summer is here! It is so relaxing having the kids out of school and having extended hours of daylight! We are spending time in Northern Michigan this Summer, and it is staying light until ten p.m. I love this time of year! I get so much fresh air because I am outdoors a lot more!

This is the Cherry Capital of the world, so what better time to make some Cherry Lemon Biscotti cookies to dunk in a cup of delicious coffee or tea?

Grain Free Cherry Lemon Biscotti Cookies

Here’s the recipe!

Cherry Lemon Biscotti

Preheat your oven to 350º degrees. Lay out a parchment lined cookie sheet.

Ingredients:

2 1/2 Cups Superfine Almond Flour

1 Tablespoon of Coconut Flour

Zest of 1 Lemon

1/2 Teaspoon of Baking Soda

1/4 Teaspoon of Sea Salt

2 Pastured Eggs

1/3 Cup Good Honey

1 Tablespoon of Fresh Lemon Juice

1 Teaspoon of Pure Vanilla Extract

1/3 Cup of Dried Tart Cherries

Directions:

Sift together your dry ingredients in a medium to large bowl. In a separate bowl with an electric hand-held mixer, blend your wet ingredients. (The cherries are last, so don’t add them yet). Add the wet ingredients to the dry and mix with your mixer until fully smooth and incorporated. With a spatula, fold in the cherries evenly. Mound the dough onto your prepared, parchment lined baking sheet. With wet hands, form the dough into a 1 1/2 inch high rectangle like this:

It looks fancy with the cookie cutter design on the top, but it disappeared during baking, so no need to do this! 🙂

Bake for 20 minutes until golden brown. Remove from the oven and cool for 30 minutes on the cookie sheet.

With a serrated bread knife slice the biscotti on a diagonal, starting at a short corner. Make the slices approximately an inch thick. If some fall apart or break, at this point you can pat them back together. Lay cut side down back on the cookie sheet. Bake for seven minutes on one side, then remove from the oven and flip them to the other cut side and bake 5 more minutes. Remove from the oven and cool completely.

Pumpkin Cranberry Biscotti


One of my favorite cookies of all time is biscotti! It is elegant, and I love the shape! Biscotti means twice baked, and the first documented recipe originated in Italy. You start by baking it in a log shape, letting it cool, and then cutting it into long slices and baking it again so it is crunchy and dry, perfect for dipping in a hot beverage. Biscotti and I have a long history.  I am known to get the biscotti jar out when company is over and we are playing cards and having coffee.  I am so happy that eating SCD and Paleo doesn’t mean I have to give up my biscotti! This is a wonderful Autumn recipe with pumpkin and tart cranberries that you are sure to love!

Pumpkin Cranberry Biscotti

Preheat Oven 350º

Ingredients:

1 3/4 Cups Superfine Almond Flour

2 Tablespoons Coconut Flour

1/2 Teaspoon Baking Soda

1/4 Teaspoon Himalayan Pink Salt

1 Teaspoon Pumpkin Pie Spice

1/2 Cup Pumpkin Puree, SCD Legal

3 Tablespoons Clear Honey

1 Teaspoon pure Vanilla Extract

1/3 Cup Dried Cranberries (Fruit Juice Sweetened)

1/4 Cup Sliced Almonds for the Top

In a medium bowl, whisk together the first five dry ingredients. In a seperate small bowl, melt your honey a few seconds in the microwave, and then whisk in the pumpkin puree and vanilla extract.  Add this to the dry ingredients and stir together vigorously until a ball forms.  Remove the dough from the bowl and knead in the dried cranberries.  Then, place your dough on a parchment lined baking sheet and form into a 14 x 8 inch log.  Flatten the top and press the sliced almonds into the top of the dough. It should look like this after it is baked the first time.

Bake for 20 minutes.  Remove from oven and cool on a cooling rack for one hour. Place cooled log on a cutting board and gently slice with a serrated knife on a diagonal into 1/2 inch slices.  Place on a parchment lined baking sheet and return to the oven and bake seven minutes. Remove from oven and turn biscotti to opposite side and continue baking another 7 minutes or until golden brown and crunchy.
