Here’s a new Asian Cabbage Salad with Cashews recipe you can make as a side dish, or add a protein, like chicken to make it a main dish salad!

You parboil the shredded cabbage for just 3 minutes to soften it a bit, then add the dressing and remaining ingredients.

After it chills in the fridge for a few hours, all the flavors meld together deliciously.

Just before serving, sprinkle the salad with crunchy cashews and a little extra sea salt and pepper!

Asian Cabbage Salad with Cashews

Ingredients:

1/2 of a Green Cabbage, Shredded with a Sharp Knife

1/4 Cup of Shredded Carrots

3 Green Onions, Sliced

1/2 Cup of Coarsely Chopped Cashews

Dressing:

1 Tablespoon of Fish Sauce (I use Red Boat)

1 Tablespoon of Coconut Aminos

Juice of 2 Limes

1/2 Cup of Full Fat Coconut Milk

2 Tablespoons of Garlic Olive Oil or (Olive Oil and 1 Clove of Minced Garlic)

1 Teaspoon of Sea Salt

1/2 Teaspoon of Black Pepper

Directions: Bring a large pot of salted water to a boil over high heat. While the water is coming to a boil, whisk together your dressing and prep the rest of the ingredients.

When the water is at a rolling boil, add the shredded cabbage and cook for 3 minutes. Pour the cabbage into a colander, and drain thoroughly.

Add the warm cabbage to a large bowl along with the green onions and carrots. Pour the dressing over the vegetables and toss to coat well. Refrigerate for 2 hours before serving and up to a day. Before serving, sprinkle with the chopped cashews and some additional sea salt and pepper to taste.

Recipes that are simple and delicious are exactly what I am looking for in the Summertime when there are more hours of daylight to be enjoyed.

Yesterday I started off with a quick 20 minute workout using resistance bands that made me feel energized and ready for the day. I had a green smoothie for breakfast and my go to Matcha Green Tea Latte

We are in Northern Michigan for a few months, where there is 40 minutes more of daylight up here than in Maryland, and we are trying to enjoy every minute! My daughters and I went to a local coffee shop where they are having a fierce Summer competition of a card game called Quiddler. They keep score of every game to have a grand champ score at Summer’s end!

After lunch we went to the beach, and for dinner I made this new recipe that was blog worthy using Shrimp and Caramelized Shallots over Oven Roasted Spaghetti Squash. The citrus flavors really complimented the dish! I liked how the orange juice in the “noodles” melded with the lemon in the shrimp in each bite!

Shrimp and Shallot Bowl with Spaghetti Squash Noodles

Ingredients:

1 Pound of Baby Baby Shrimp

1 Large Shallot or a Few Small (1/4 Cup) thinly sliced

2 Tablespoons of Olive Oil

2 Cloves of Garlic, minced

Zest of one Lemon

1/8 Teaspoon of Sea Salt

1/8 Teaspoon of Black Pepper


for Noodles:

1 Medium Spaghetti Squash (halved lengthwise and seeds removed)

Juice from one Orange

1 Tablespoon of Olive Oil

Sea Salt and Pepper to Taste

Fresh Basil

Directions:

Preheat the oven to 400º degrees. Lay the prepared squash on a baking sheet lined with parchment. Sprinkle with Sea Salt and Pepper and place face down and bake for 40 minutes, or until tender.  Flip over to cool slightly while you make the Shrimp. Wash and Tear about a quarter cup of fresh Basil and set aside.

For Shrimp – in a large pan on the stove top, add the olive oil, and heat over medium high heat to warm. Add the shallots, garlic and lemon zest. Sprinkle with Sea Salt and Pepper, and cook until the Shallot starts to brown and caramelize. Add the shrimp, and cook quickly over high heat until pink.

Set aside and cover to keep warm while you use a fork to shred the Spaghetti Squash into a mixing bowl. Add the Olive Oil, Orange Juice, and Sea Salt and Pepper to taste to the squash noodles. Toss it all together.

Mound the Squash Noodles into three personal sized bowls. Top with the Shrimp and Shallots, and sprinkle with Fresh Basil!

You are ready to eat! 🙂 Grab a fork!

Chocolate Banana Quick Bread (Grain Free)

Who doesn’t love a portable quick bread that you can pack? My kiddos like a slice in their lunches, and I can feel good about the great ingredients in this recipe knowing it is good for them, and me, and sweet at the same time.  It’s mostly those bananas with a touch of good quality honey baby! Quick breads are supposed to be soft, but not mushy, and I totally consider them a comfort food. How many of you had Mom’s or Grandma’s that made quick bread when you were young? My favorite, and it’s a classic, is banana bread.

Here is a healthy spin on Banana Quick Bread. It is chocolatey too with the addition of magnesium rich raw cacao! It also contains nice amounts of potassium, protein, and uses unprocessed, real food ingredients.

Preheat your oven to 350º degrees. Line a 8 inch loaf pan with parchment paper. This keeps the loaf from sticking and helps it lift right out of the pan, so leave some edges sticking out to grab on to.

Ingredients:

2 Cups of Superfine Almond Flour

2 Tablespoons of Coconut Flour

1/2 Cup Raw Cacao

1 Teaspoon of Baking Soda

1 Teaspoon of Baking Powder

1 Teaspoon of Cinnamon

1/2 Teaspoon of Allspice

1/2 Teaspoon of Sea Salt

Whisk together the dry ingredients in a bowl and set aside.

4 Ripe Bananas with black spots

4 Eggs (I used soy free eggs due to a sensitivity)

1/4 Cup Honey, I used raw honey

1/4 Cup Coconut Oil, melted

1 Teaspoon of Vanilla Extract

In a food processor, add all the wet ingredients and blend until completely smooth. Alternately, using a hand mixer, do the same. It will just take longer to incorporate, making sure the bananas are completely smooth.

Add in the Dry Ingredients, and continue to mix until completely blended. Pour into your prepared loaf pan. Bake in the preheated 350º oven for 60 to 75 minutes, or until a toothpick inserted into the center of the loaf comes out clean with just a few crumbs attached. Cool in the loaf pan five minutes on the counter before removing the loaf to cool completely before slicing.

This bread keeps for three days at room temperature. For longer storage, refrigerate the loaf well wrapped.

Mug muffins are scrumptious, convenient, individual and fast! Just mix and microwave for 1 minute 30 seconds and you have a warm muffin in a mug!

Since Fall is in the air, I have been craving pumpkin. I was in the kitchen this weekend creating a pumpkin flavored mug muffin with a touch of chocolate that really evokes thoughts of cooler weather, sweaters, autumn crafts and warm hugs. My youngest daughters are 12 and 14 now and like to choose and make their own breakfasts. They love mug muffins and can whip them up quickly on a school morning!

This jar salad is so full of freshness, it makes me want to sing!

Food is supposed to make us feel good! So often today, the food that makes us feel “good” is not good for us. We have been inundated with ads and media from food manufacturers that tell us a food will make us happy.

Food that truly makes a person happy is the food that supports every cell of the body. Food that your body recognizes and knows what to do with. Pure, real, unprocessed food. It makes us feel good and look good. It gives us energy, and makes our skin glow and hair shine. It promotes longevity and prevents disease. Our bodies are like a very intricate computer that communicates with all the different components. We don’t want to confuse it by putting in artificial food that we weren’t made to process.

You can make this jar salad to pack for lunch, or make a larger version of it for another meal to share. It keeps well also! After a day in the refrigerator, the flavors meld even more!

PEACHY JAR SALAD WITH GINGER VINAIGRETTE

Ingredients for the Salad:

1 Cup of Ripe Tomato (Your favorite, any color. I used Heirloom)

1 Ripe and Juicy Peach (sliced and tossed with a tsp. fresh Lime Juice to prevent browning)

1/2 Cup of Watermelon (cubed)

1/2 Cup of Cucumber (cubed)

2 Green Onions (thinly sliced)

1/4 Cup Raw Pecans

1/4 Cup Green Pepper (diced)

GINGER VINAIGRETTE

This makes a 1/2 Cup of dressing, so you will have extra!

1/3 Cup of Extra Virgin Olive Oil

1 Tablespoons of Fresh Lime Juice

2 Teaspoons of Fresh, Minced Ginger

1/2 Teaspoon of Minced Jalapeno Pepper

1/4 Teaspoon Himalayan Pink Salt or Sea Salt

1/8 Teaspoon of Freshly Ground Black Pepper

Directions: Puree the Vinaigrette ingredients thoroughly in a blender.

To assemble your salad: Use a generous glass jar that holds 4 cups. You can also make two smaller jar salads with pint jars, which hold two cups each.

Place two tablespoons of Ginger Vinaigrette in the bottom of the jar.

Add the other prepared ingredients in the following order from bottom to top:

  1. Green onion
  2. Tomato
  3. Green Pepper
  4. Watermelon
  5. Cucumbers
  6. Peaches
  7. Pecans

Seal your jar, and refrigerate until ready to eat! You have made sunshine in a bottle.

Before eating, toss your salad gently by inverting the jar several times to coat the salad with the dressing. Remove lid and enjoy.
