Simple Peach Ice Cream (Dairy Free)

Peaches are in season now, and juicy ripe peaches are so good in ice cream! My children have been gobbling up all the peaches as I buy them at the organic market, but I was able to snatch a couple to make this ice cream recipe before they were gone. Peaches are very similar to tomatoes in that when they are ripe, and in season, they taste like a different food entirely. Do you know what I mean?

So, today I have a very simple and delicious seasonal ice cream recipe to share that is Dairy Free!

You will need an ice cream freezer. I used a Cuisinart.


Two Ripe and Juicy Organic Peaches, Peeled and Pit Removed

1 Can of Full Fat Coconut Milk

6 Tablespoons of Good Honey

2 Tablespoons of Fresh Squeezed Lemon Juice

2 Teaspoons of Pure Vanilla Extract

1/4 Teaspoon of Ground Cinnamon

Simple Peach Ice Cream Recipe

Directions: Here is where an immersion blender comes in handy, but you can also use a regular blender and get the same results, just more clean up! Place all the ingredients into a 4 cup glass measuring cup, and blend with an immersion blender until smooth. Alternately, place in a blender and blend until smooth.

Refrigerate for four hours to chill thoroughly. Freeze in your ice cream maker.

Smooth and Peachy Coconut Milk Ice Cream

When Spring is getting close and the days are lengthening, I start craving fresh fruity flavors. The beauty of freeze dried fruit is the flavor is intensified, because it is concentrated. So, it is easy to make a fruit forward ice cream or cookie off season. I really like Karen’s Naturals freeze dried fruit. They are organic and contain just fruit, no additives or preservatives. This is a pretty straight forward recipe using just a few quality ingredients to make a smooth and peachy, dairy free, ice cream that tastes fresh, even when peaches are not in season!

This recipe makes enough for four generous servings of ice cream. It is dairy free, gluten free and honey sweetened. The squeeze of fresh lemon juice brightens the ice cream and gives it the perfect tang.

2 Cups of Full Fat Coconut Milk

1 Bag of Just Organic Freeze Dried Peaches (here)

1/2 Cup of Quality Honey (I use local)

2 Tablespoons of Pure Vanilla Extract (use 1/2 teaspoon of  vanilla powder for AIP)

1 Tablespoon of Fresh Squeezed Lemon Juice

1/8 Teaspoon of Sea Salt

Directions: In a high speed blender, puree all the ingredients. Chill in the refrigerator for 4 hours. Churn in an ice cream maker. I use this one.

Enjoy! You can store leftover ice cream in the freezer. It is easy to scoop straight from the freezer because of the higher vanilla content. Have a blast of peach before peach season to celebrate the coming of Spring!

Peach Mango Sorbet

The peaches are so good this year, and I have been finding ways to enjoy them almost every day while they are fresh and in season. One of the ways I have been eating them is by making a fresh sorbet with peaches and mango in my blender for instant sorbet. I peel and dice the fresh fruit and freeze it first. Find the full recipe below.

Peaches are packed with nutrition and soluable fiber and aid digestion. Here’s a great article on 18 Amazing Benefits of Peaches including skin health, vision, immune system and anti-aging properties. I added just 1 1/2 tablespoons of low glycemic coconut sugar to the recipe that serves three. It is important to buy organic peaches, because they are on the dirty dozen list.

Here’s the simple and delicious recipe for you to enjoy!

2 Organic Peaches, Washed, Peeled, Diced and Frozen

1 Mango, Washed, Peeled, Diced and Frozen

1 Tablespoon of Fresh Squeezed Lemon Juice

1 1/2 Tablespoons of Coconut Sugar

Directions: Add all the ingredients to a high speed blender with a plunger (I used a Vitamix) and blend until thick and creamy. Serve immediately, or place the sorbet in a glass freezer dish and freeze for later. If you save it for later, remove the sorbet from the freezer and let it sit on the counter for ten to fifteen minutes to soften.

I’ll admit I am really careful about balancing my nutrition. I have worked hard on my gut health over the last three years so I can really absorb the nutrients I eat. I have learned to listen to my body and be intuitive about what it may need. The needs of our bodies changes based on many factors including the time of year, our age, exposure to toxins, activity levels, stress, sleep, illness, and our environment.

Food is your most basic form of self care. One thing I rarely compromise on with myself is, I don’t eat junk. If I am having a treat, the food is real food ingredients. If you adopt this way of eating, if you aren’t already, you will get feedback as your body changes. We really are what we eat. People will comment on how obvious it is that you take care of yourself, and ask you your secret.

5 Organic Juicy Ripe Peaches (pitted, peeled and sliced)

6 oz. of Organic Blackberries

2 Cups Organic Strawberries (halved)

1/4 Cup Sliced Almonds

1 Organic Lime (Zest and Juice)

2 Tablespoons Dry White Wine (Optional, I used Sauvignon Blanc)

2 Teaspoons of Good Quality Honey

1/2 Teaspoon Pure Vanilla Extract

Directions: Whisk together the Lime Juice, Honey, Lime Zest, Vanilla and White Wine if using. Pour over the bowl of prepared fruit and gently fold. Refrigerate 2 hours and up to 24 hours. Right before serving, sprinkle with sliced almonds.

Serve chilled and enjoy! Have a fabulous weekend!

Well, Hello June!

This is a month that has so much going for it. The month of graduations, vacations, school ending, wedding season, and blooms and greenery abound! June escorts Summer in. I am quite fond on June!

It is a time of year when there are so many fresh, light and juicy whole food options to choose from. We can take care of our bodies and skin from the inside out. Your skin changes with the seasons, so it’s always a good idea to revamp and address your skin care when you enter a different time of year.

This is what I am using for the Summer. It is ultra nourishing! Never Grow Up is from the Look Natural line of Perfectly Posh.

I feel like this serum is a blast of vitamins for my face! There are so many nutrients in it, and it is lightweight, so it soaks in quickly. This is what a great serum should do! Then I apply Never Grow Up Face Creme after giving the serum a minute or two to soak in. Apply your serum before moisturizer and/or sunscreen. Sunscreen is a must for Summer, and year round is the best.  For my eyes, I am using Prize on the Eyes, and I love Bare It All Micellar Tonic which is a three in one makeup remover, cleanser and moisturizer. I especially like to use it as a toner at the end of the day, so if I miss any traces of makeup, it helps me out, plus adds softness.
